Delicious grilled shrimp tacos topped with fresh mango salsa, perfect for a summer meal.
Ingredients

- 1 lb shrimp, peeled and deveined
- 2 tablespoons olive oil
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 8 small corn tortillas
- 1 cup mango, diced
- 1/2 red onion, diced
- 1 jalapeño, minced
- 1/4 cup cilantro, chopped
- Juice of 1 lime
Instructions
- In a bowl, combine shrimp, olive oil, chili powder, cumin, garlic powder, salt, and pepper. Marinate for 15 minutes.
- Preheat the grill to medium-high heat.
- Grill the shrimp for 2-3 minutes on each side until cooked through.
- In another bowl, mix mango, red onion, jalapeño, cilantro, and lime juice to make the salsa.
- Warm the corn tortillas on the grill for about 30 seconds on each side.
- Assemble the tacos by placing grilled shrimp on the tortillas and topping with mango salsa.
- Serve immediately and enjoy!
Notes
- For extra flavor, add avocado slices to the tacos.
- Adjust the spiciness of the salsa by adding more or less jalapeño.
- These tacos can be served with a side of lime wedges.
