A quick and delicious summer dinner featuring grilled shrimp tacos topped with fresh mango salsa.
Ingredients

- 1 lb shrimp, peeled and deveined
- 2 tablespoons olive oil
- 1 teaspoon chili powder
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 8 small corn tortillas
- 1 ripe mango, diced
- 1/4 red onion, finely chopped
- 1/4 cup cilantro, chopped
- 1 lime, juiced
Instructions
- In a bowl, combine shrimp, olive oil, chili powder, garlic powder, and salt. Mix well.
- Preheat the grill to medium-high heat.
- Grill the shrimp for 2-3 minutes on each side until cooked through.
- While the shrimp is grilling, prepare the mango salsa by mixing mango, red onion, cilantro, and lime juice in a bowl.
- Warm the corn tortillas on the grill for about 30 seconds on each side.
- Assemble the tacos by placing grilled shrimp on the tortillas and topping with mango salsa.
- Serve immediately and enjoy!
Notes
- Feel free to add avocado or jalapeños for extra flavor.
- These tacos can be served with a side of rice or beans.
- For a spicier kick, add hot sauce to the tacos.
