Grilled Veggie and Halloumi Skewers are a delicious and healthy vegetarian dish perfect for summer barbecues or quick weeknight dinners.

- 1 zucchini, sliced
- 1 bell pepper, cut into chunks
- 1 red onion, cut into chunks
- 200g halloumi cheese, cut into cubes
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Preheat the grill to medium-high heat.
- In a bowl, combine the zucchini, bell pepper, red onion, and halloumi cheese.
- Drizzle with olive oil, and sprinkle with oregano, salt, and pepper. Toss to coat.
- Thread the veggies and halloumi onto skewers, alternating between them.
- Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the veggies are tender and the halloumi is golden brown.
- Remove from the grill and serve warm.
Notes
- Soak wooden skewers in water for 30 minutes before grilling to prevent burning.
- Feel free to use any seasonal vegetables you have on hand.
- Serve with a side of tzatziki or a fresh salad for a complete meal.
