Description

Grilled Veggie and Halloumi Skewers are a delicious and healthy vegetarian dish perfect for summer barbecues or quick weeknight dinners.


Ingredients

  • 1 zucchini, sliced
  • 1 bell pepper, cut into chunks
  • 1 red onion, cut into chunks
  • 200g halloumi cheese, cut into cubes
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a bowl, combine the zucchini, bell pepper, red onion, and halloumi cheese.
  3. Drizzle with olive oil, and sprinkle with oregano, salt, and pepper. Toss to coat.
  4. Thread the veggies and halloumi onto skewers, alternating between them.
  5. Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the veggies are tender and the halloumi is golden brown.
  6. Remove from the grill and serve warm.

Notes

  • Soak wooden skewers in water for 30 minutes before grilling to prevent burning.
  • Feel free to use any seasonal vegetables you have on hand.
  • Serve with a side of tzatziki or a fresh salad for a complete meal.
