Description

Delicious grilled skewers featuring a colorful mix of vegetables and halloumi cheese, perfect for a summer barbecue.


Ingredients

Scale
  • 1 zucchini, sliced
  • 1 bell pepper, cut into chunks
  • 1 red onion, cut into wedges
  • 200g halloumi cheese, cut into cubes
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a bowl, combine the zucchini, bell pepper, red onion, and halloumi cheese.
  3. Drizzle with olive oil, and sprinkle with oregano, salt, and pepper. Toss to coat.
  4. Thread the vegetables and halloumi onto skewers, alternating between them.
  5. Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the veggies are tender and halloumi is golden.
  6. Remove from the grill and serve warm.

Notes

  • Soak wooden skewers in water for 30 minutes before grilling to prevent burning.
  • Feel free to substitute any vegetables you prefer.
