A quick and delicious side dish featuring grilled zucchini topped with a flavorful lemon herb butter.
Ingredients

- 2 medium zucchinis, sliced
- 2 tablespoons olive oil
- Salt and pepper to taste
- 2 tablespoons unsalted butter
- 1 tablespoon fresh lemon juice
- 1 teaspoon garlic, minced
- 1 tablespoon fresh parsley, chopped
- 1 teaspoon fresh thyme, chopped
Instructions
- Preheat the grill to medium-high heat.
- In a bowl, toss the zucchini slices with olive oil, salt, and pepper.
- Place the zucchini on the grill and cook for about 3-4 minutes on each side until tender and grill marks appear.
- In a small saucepan, melt the butter over low heat.
- Add lemon juice, garlic, parsley, and thyme to the melted butter and stir well.
- Once the zucchini is grilled, remove it from the grill and drizzle the lemon herb butter over the top.
- Serve immediately and enjoy!
Notes
- For extra flavor, add grated Parmesan cheese on top before serving.
- Feel free to substitute herbs based on your preference.
