Description

A delicious mashup of guacamole and deviled eggs, perfect for summer parties.


Ingredients

  • 6 large eggs
  • 1 ripe avocado
  • 1 tablespoon lime juice
  • 1/4 cup diced red onion
  • 1/4 cup diced tomatoes
  • 1 tablespoon chopped cilantro
  • Salt and pepper to taste

Instructions

  1. Hard boil the eggs, then cool and peel them.
  2. Cut the eggs in half and remove the yolks.
  3. In a bowl, mash the yolks with the avocado and lime juice.
  4. Add the diced red onion, tomatoes, and cilantro to the mixture.
  5. Season with salt and pepper to taste.
  6. Fill the egg whites with the guacamole mixture.
  7. Garnish with additional cilantro if desired.
