A delicious mashup of guacamole and deviled eggs, perfect for summer parties.
Ingredients

- 6 large eggs
- 1 ripe avocado
- 1 tablespoon lime juice
- 1/4 cup diced red onion
- 1/4 cup diced tomatoes
- 1 tablespoon chopped cilantro
- Salt and pepper to taste
Instructions
- Hard boil the eggs, then cool and peel them.
- Cut the eggs in half and remove the yolks.
- In a bowl, mash the yolks with the avocado and lime juice.
- Add the diced red onion, tomatoes, and cilantro to the mixture.
- Season with salt and pepper to taste.
- Fill the egg whites with the guacamole mixture.
- Garnish with additional cilantro if desired.
Notes
- For a spicier kick, add diced jalapeños.
- These can be made a few hours in advance; just cover and refrigerate.
- Serve chilled for the best flavor.
