- 1 cup pumpkin puree
- 1 cup whole wheat flour
- 1/2 cup almond milk
- 1/4 cup maple syrup
- 1/4 cup coconut oil, melted
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp salt
- 1 tsp vanilla extract
- 1/2 cup powdered sugar (for glaze)
- 1/2 tsp vanilla bean paste (for glaze)
Instructions
- Preheat the oven to 350°F (175°C) and grease a donut pan.
- In a large bowl, mix together the pumpkin puree, almond milk, maple syrup, and melted coconut oil.
- In another bowl, whisk together the whole wheat flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- Combine the wet and dry ingredients until just mixed.
- Fill the donut pan with the batter and bake for 15-20 minutes or until a toothpick comes out clean.
- Let the donuts cool before glazing.
- For the glaze, mix powdered sugar and vanilla bean paste until smooth and drizzle over the cooled donuts.
Notes
- Store leftovers in an airtight container for up to 3 days.
- For a sweeter glaze, adjust the amount of powdered sugar.
- These donuts can be frozen for up to a month.
