Description

Delicious and nutritious muffins made with peanut butter and bananas, perfect for a healthy snack or breakfast.


Ingredients

  • 2 ripe bananas
  • 1 cup natural peanut butter
  • 2 eggs
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup gluten-free oats

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mash the ripe bananas until smooth.
  3. Add the peanut butter, eggs, honey (or maple syrup), and vanilla extract to the mashed bananas and mix well.
  4. In a separate bowl, combine the gluten-free oats, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  6. Pour the batter into the prepared muffin tin, filling each cup about 2/3 full.
  7. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow the muffins to cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
