Ingredients

  • 2 lbs beef chuck, cut into 1-inch cubes
  • 4 cups beef broth
  • 3 medium carrots, sliced
  • 3 medium potatoes, diced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 bay leaf

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the beef cubes and brown on all sides.
  3. Stir in the onions and garlic, cooking until softened.
  4. Add the tomato paste, thyme, rosemary, salt, and pepper, stirring to combine.
  5. Pour in the beef broth and add the bay leaf.
  6. Bring to a boil, then reduce heat and simmer for 1 hour.
  7. Add the carrots and potatoes, and continue to simmer for another 30-40 minutes until vegetables are tender.
  8. Remove the bay leaf before serving.

Notes

  • For a thicker stew, you can add a cornstarch slurry at the end.
  • Feel free to add other vegetables like peas or green beans.
  • This stew can be made a day in advance for better flavor.
