- 1 lb grilled chicken breast, diced
- 1 cup black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 cup diced tomatoes
- 1 avocado, sliced
- 1/2 cup shredded cheese (optional)
- 1/4 cup fresh cilantro, chopped
- 1 lime, juiced
- Salt and pepper to taste
Instructions
- Cook the brown rice according to package instructions.
- Grill the chicken breast until fully cooked, then dice it into bite-sized pieces.
- In a large bowl, combine the cooked rice, diced chicken, black beans, corn, and diced tomatoes.
- Add lime juice, salt, and pepper to taste, and mix well.
- Divide the mixture into meal prep containers.
- Top each bowl with sliced avocado, shredded cheese, and chopped cilantro.
- Store in the refrigerator for up to 5 days.
