- 2 cans of corn (15 oz each)
- 1/2 cup of unsalted butter, melted
- 1/2 cup of honey
- 1 cup of sour cream
- 1 package of corn muffin mix (8.5 oz)
- 1 cup of shredded cheddar cheese
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
Instructions
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, combine the melted butter and honey.
- Add the sour cream, corn, corn muffin mix, salt, and pepper to the bowl and mix until well combined.
- Fold in the shredded cheddar cheese.
- Pour the mixture into a greased 9×13 inch baking dish.
- Bake for 45-50 minutes or until the top is golden brown and a toothpick inserted in the center comes out clean.
- Let it cool for a few minutes before serving.
Notes
- For a spicier version, add diced jalapeños to the mixture.
- This casserole can be made ahead of time and stored in the refrigerator before baking.
