- 2 cups cooked rice
- 1 cup black beans, drained and rinsed
- 1 cup corn, drained
- 1 cup diced tomatoes
- 1 avocado, sliced
- 1/2 cup shredded cheese
- 1/4 cup chopped cilantro
- Salt and pepper to taste
Instructions
- In a skillet over medium heat, cook the ground beef until browned.
- Drain excess fat and add honey, chipotle sauce, garlic powder, onion powder, cumin, salt, and pepper. Stir to combine.
- Simmer for 5-7 minutes until the sauce thickens.
- In serving bowls, layer cooked rice, black beans, corn, and the honey chipotle beef.
- Top with diced tomatoes, avocado slices, shredded cheese, and chopped cilantro.
