- 4 cups ripe peaches, peeled and chopped
- 1 cup granulated sugar
- 1/4 cup lemon juice
- 1/2 teaspoon vanilla extract
- 1 packet pectin (1.75 oz)
Instructions
- Prepare the peaches by peeling and chopping them into small pieces.
- In a large pot, combine the chopped peaches, sugar, and lemon juice. Stir well.
- Let the mixture sit for about 30 minutes to allow the peaches to release their juices.
- Add the pectin to the peach mixture and bring it to a boil over medium heat, stirring constantly.
- Once boiling, continue to cook for 1-2 minutes until the mixture thickens.
- Remove from heat and stir in the vanilla extract.
- Pour the jam into sterilized jars and seal them tightly.
- Process the jars in a boiling water bath for 10 minutes to ensure preservation.
- Let the jars cool completely before storing them in a cool, dark place.
