- 4 boneless, skinless chicken breasts
- 1/4 cup lemon juice
- 4 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
- 1 cup chicken broth
Instructions
- Season the chicken breasts with salt, pepper, and oregano.
- Set the Instant Pot to sauté mode and add olive oil.
- Once hot, add the chicken breasts and sear for 2-3 minutes on each side.
- Add minced garlic and lemon juice, then pour in the chicken broth.
- Close the lid and set the Instant Pot to manual high pressure for 8 minutes.
- Once cooking is complete, perform a quick release of the pressure.
- Remove the chicken and let it rest for a few minutes before slicing.
- Serve with the sauce drizzled over the top.
Notes
- For extra flavor, marinate the chicken in lemon juice and garlic for a few hours before cooking.
- Serve with steamed vegetables or rice for a complete meal.
- Leftovers can be stored in the refrigerator for up to 3 days.
