Instructions
- Preheat the oven to 375°F (190°C).
- Cut the yellow squash in half lengthwise and scoop out the seeds to create boats.
- In a skillet, sauté onions, bell peppers, and garlic until softened.
- In a bowl, mix the cooked quinoa, sautéed vegetables, marinara sauce, Italian seasoning, salt, and pepper.
- Fill each squash boat with the quinoa mixture.
- Top with mozzarella and Parmesan cheese.
- Place the stuffed squash in a baking dish and cover with foil.
- Bake for 25 minutes, then remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden.
