Ingredients

  • 4 medium yellow squash
  • 1 cup cooked quinoa
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup chopped bell peppers
  • 1/2 cup chopped onions
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the yellow squash in half lengthwise and scoop out the seeds to create boats.
  3. In a skillet, sauté onions, bell peppers, and garlic until softened.
  4. In a bowl, mix the cooked quinoa, sautéed vegetables, marinara sauce, Italian seasoning, salt, and pepper.
  5. Fill each squash boat with the quinoa mixture.
  6. Top with mozzarella and Parmesan cheese.
  7. Place the stuffed squash in a baking dish and cover with foil.
  8. Bake for 25 minutes, then remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden.
