Ingredients

- 2 cans young green jackfruit in brine, drained and rinsed
- 1 tablespoon olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1 teaspoon chili powder
- Salt and pepper to taste
- 1 cup vegetable broth
- 8 small corn tortillas
- Fresh cilantro, for garnish
- Lime wedges, for serving
Instructions
- In a large skillet, heat olive oil over medium heat.
- Add diced onion and sauté until translucent.
- Add minced garlic and cook for another minute.
- Add the jackfruit, cumin, smoked paprika, chili powder, salt, and pepper. Stir to combine.
- Pour in the vegetable broth and bring to a simmer.
- Cook for about 20-25 minutes, stirring occasionally, until the jackfruit is tender and can be shredded with a fork.
- While the jackfruit is cooking, warm the corn tortillas in a separate skillet.
- Once the jackfruit is ready, shred it with a fork and serve in warm tortillas.
- Garnish with fresh cilantro and serve with lime wedges.
Notes
- For extra flavor, marinate the jackfruit in spices for a few hours before cooking.
- These tacos can be topped with avocado, salsa, or your favorite toppings.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
