Ingredients

  • 2 cans young green jackfruit in brine, drained and rinsed
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1 cup vegetable broth
  • 8 small corn tortillas
  • Fresh cilantro, for garnish
  • Lime wedges, for serving

Instructions

  1. In a large skillet, heat olive oil over medium heat.
  2. Add diced onion and sauté until translucent.
  3. Add minced garlic and cook for another minute.
  4. Add the jackfruit, cumin, smoked paprika, chili powder, salt, and pepper. Stir to combine.
  5. Pour in the vegetable broth and bring to a simmer.
  6. Cook for about 20-25 minutes, stirring occasionally, until the jackfruit is tender and can be shredded with a fork.
  7. While the jackfruit is cooking, warm the corn tortillas in a separate skillet.
  8. Once the jackfruit is ready, shred it with a fork and serve in warm tortillas.
  9. Garnish with fresh cilantro and serve with lime wedges.
