Description

Lemon Blueberry Icebox Bars are a refreshing and tangy dessert that requires no baking, making them perfect for warm weather.


Ingredients

  • 1 cup graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1 cup powdered sugar
  • 8 oz cream cheese, softened
  • 1/2 cup lemon juice
  • 1 cup blueberries
  • 1 cup whipped cream

Instructions

  1. In a bowl, mix graham cracker crumbs and melted butter until combined.
  2. Press the mixture into the bottom of a baking dish to form the crust.
  3. In another bowl, beat together the cream cheese and powdered sugar until smooth.
  4. Add lemon juice and mix until well combined.

  7. Sprinkle blueberries on top.
  8. Refrigerate for at least 4 hours or until set.
