Description

A flavorful and juicy roast chicken infused with lemon and herbs, served with delicious pan juices.


Ingredients

Scale
  • 1 whole chicken (about 45 lbs)
  • 2 lemons, halved
  • 4 cloves garlic, minced
  • 1/4 cup olive oil
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • Salt and pepper to taste
  • 1 cup chicken broth

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a bowl, mix olive oil, garlic, rosemary, thyme, salt, and pepper.
  3. Rub the mixture all over the chicken, including under the skin.
  4. Stuff the chicken cavity with lemon halves.
  5. Place the chicken in a roasting pan and pour chicken broth around it.
  6. Roast in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C).
  7. Let the chicken rest for 10-15 minutes before carving.
  8. Serve with pan juices drizzled over the top.
