Description

A tangy and vibrant slaw that perfectly complements pulled pork, inspired by the traditional Lexington-style recipe.

Ingredients

Scale
  • 1 medium head of green cabbage, shredded
  • 1 medium head of red cabbage, shredded
  • 1 large carrot, grated
  • 1 cup apple cider vinegar
  • 1/2 cup sugar
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon celery seed
  • 1/2 teaspoon crushed red pepper flakes (optional)

Instructions

  1. In a large bowl, combine the shredded green cabbage, red cabbage, and grated carrot.
  2. In a separate bowl, whisk together the apple cider vinegar, sugar, salt, black pepper, celery seed, and crushed red pepper flakes until the sugar is dissolved.
  3. Pour the dressing over the cabbage mixture and toss to combine.
  4. Cover and refrigerate for at least 1 hour before serving to allow the flavors to meld.
  5. Serve chilled alongside pulled pork.

Notes

  • For a spicier slaw, increase the amount of crushed red pepper flakes.
  • This slaw can be made a day in advance for better flavor.
  • Adjust the sweetness by adding more or less sugar according to your taste.
