Description

Loaded BBQ Chicken Potato Skins are a delicious and satisfying appetizer or snack, featuring crispy potato skins filled with tender BBQ chicken, cheese, and topped with green onions.


Ingredients

  • 4 large russet potatoes
  • 1 cup cooked shredded chicken
  • 1 cup BBQ sauce
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions
  • Olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and scrub the potatoes, then pierce them with a fork.
  3. Rub the potatoes with olive oil, salt, and pepper.
  4. Bake the potatoes for 45-60 minutes until tender.
  5. Once cool, cut the potatoes in half and scoop out some of the flesh, leaving a thin layer.
  6. In a bowl, mix the shredded chicken with BBQ sauce.
  7. Fill each potato skin with the BBQ chicken mixture and top with shredded cheese.
  8. Bake the filled potato skins for an additional 10-15 minutes until the cheese is melted and bubbly.
  9. Remove from the oven and top with sour cream and chopped green onions before serving.
