- 4 large russet potatoes
- 1 cup shredded cheddar cheese
- 1/2 cup cooked bacon, crumbled
- 1/4 cup sour cream
- 1/4 cup green onions, chopped
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and scrub the potatoes, then pierce them with a fork.
- Rub the potatoes with olive oil, salt, and pepper.
- Bake the potatoes for about 45 minutes or until tender.
- Let the potatoes cool slightly, then cut them in half lengthwise and scoop out some of the flesh.
- Fill each potato skin with cheese and bacon, then return to the oven for an additional 10 minutes or until the cheese is melted.
- Top with sour cream and green onions before serving.
Notes
- For a vegetarian option, omit the bacon.
- Feel free to add other toppings like jalapeños or guacamole.
