Description

Ingredients

  • 6 large eggs
  • 1 cup diced bell peppers
  • 1 cup diced onions
  • 1 cup cooked and crumbled sausage or bacon
  • 1 cup shredded cheese
  • 6 large flour tortillas
  • Salt and pepper to taste

Instructions

  1. In a large skillet, sauté the bell peppers and onions until soft.
  2. In a bowl, whisk the eggs and season with salt and pepper.
  3. Add the cooked sausage or bacon to the skillet with the vegetables.
  4. Pour the eggs into the skillet and scramble until fully cooked.
  5. Remove from heat and stir in the shredded cheese.
  6. Lay out the tortillas and evenly distribute the egg mixture among them.
  7. Roll up each tortilla tightly and wrap in foil or plastic wrap.
  8. Store in the refrigerator or freezer until ready to eat.
  9. To reheat, microwave for 1-2 minutes or until heated through.
