Ingredients

- 6 large eggs
- 1 cup diced bell peppers
- 1 cup diced onions
- 1 cup cooked and crumbled sausage or bacon
- 1 cup shredded cheese
- 6 large flour tortillas
- Salt and pepper to taste
Instructions
- In a large skillet, sauté the bell peppers and onions until soft.
- In a bowl, whisk the eggs and season with salt and pepper.
- Add the cooked sausage or bacon to the skillet with the vegetables.
- Pour the eggs into the skillet and scramble until fully cooked.
- Remove from heat and stir in the shredded cheese.
- Lay out the tortillas and evenly distribute the egg mixture among them.
- Roll up each tortilla tightly and wrap in foil or plastic wrap.
- Store in the refrigerator or freezer until ready to eat.
- To reheat, microwave for 1-2 minutes or until heated through.
Notes
- Feel free to customize with your favorite vegetables or proteins.
- These burritos can be frozen for up to 3 months.
- For a vegetarian option, omit the meat and add more veggies.
