- 1 ripe mango, diced
- 1–2 jalapeños, finely chopped
- 2 tablespoons olive oil
- 2 tablespoons lime juice
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Skewers (wooden or metal)
Instructions
- In a bowl, combine olive oil, lime juice, garlic powder, salt, and pepper.
- Add the shrimp and jalapeños to the marinade, mixing well to coat.
- Let the shrimp marinate for at least 30 minutes.
- Thread the marinated shrimp and diced mango onto skewers, alternating between shrimp and mango.
- Preheat the grill to medium-high heat.
- Grill the skewers for 2-3 minutes on each side, or until the shrimp are cooked through and opaque.
- Remove from the grill and serve immediately.
Notes
- Soak wooden skewers in water for 30 minutes before grilling to prevent burning.
- Adjust the number of jalapeños based on your spice preference.
