Description

Mango-Jalapeño Shrimp Skewers are a spicy and flavorful dish perfect for grilling, especially during Cinco de Mayo celebrations.

Ingredients

Scale
  • 1 lb large shrimp, peeled and deveined
  • 1 ripe mango, diced
  • 12 jalapeños, finely chopped
  • 2 tablespoons olive oil
  • 2 tablespoons lime juice
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Skewers (wooden or metal)

Instructions

  1. In a bowl, combine olive oil, lime juice, garlic powder, salt, and pepper.
  2. Add the shrimp and jalapeños to the marinade, mixing well to coat.
  3. Let the shrimp marinate for at least 30 minutes.
  4. Thread the marinated shrimp and diced mango onto skewers, alternating between shrimp and mango.
  5. Preheat the grill to medium-high heat.
  6. Grill the skewers for 2-3 minutes on each side, or until the shrimp are cooked through and opaque.
  7. Remove from the grill and serve immediately.

Notes

  • Soak wooden skewers in water for 30 minutes before grilling to prevent burning.
  • Adjust the number of jalapeños based on your spice preference.
