- 1 lb shrimp, peeled and deveined
- 1 ripe mango, diced
- 2 ripe avocados, halved and pitted
- 1/2 red onion, finely chopped
- 1 jalapeño, seeded and minced
- 1/4 cup fresh cilantro, chopped
- Juice of 2 limes
- Salt and pepper to taste
Instructions
- In a bowl, combine the shrimp, lime juice, red onion, jalapeño, and cilantro. Season with salt and pepper.
- Let the mixture marinate in the refrigerator for at least 30 minutes until the shrimp is opaque.
- Meanwhile, scoop out some of the flesh from the avocado halves to create a larger cup.
- Once the shrimp mixture is ready, gently fold in the diced mango.
- Fill each avocado half with the mango shrimp ceviche mixture.
- Serve immediately and enjoy!

- For a spicier kick, leave some seeds in the jalapeño.
