Description

A refreshing and vibrant appetizer featuring succulent shrimp and sweet mango served in creamy avocado cups, perfect for your Cinco de Mayo celebration.


Ingredients

  • 1 lb shrimp, peeled and deveined
  • 1 ripe mango, diced
  • 2 ripe avocados, halved and pitted
  • 1/2 red onion, finely chopped
  • 1 jalapeño, seeded and minced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 2 limes
  • Salt and pepper to taste

Instructions

  1. In a bowl, combine the shrimp, lime juice, red onion, jalapeño, and cilantro. Season with salt and pepper.
  2. Let the mixture marinate in the refrigerator for at least 30 minutes until the shrimp is opaque.
  3. Meanwhile, scoop out some of the flesh from the avocado halves to create a larger cup.
  4. Once the shrimp mixture is ready, gently fold in the diced mango.
  5. Fill each avocado half with the mango shrimp ceviche mixture.
  6. Serve immediately and enjoy!
