Description

A delicious and healthy Mason Jar Greek Salad that is perfect for picnics and easy to transport.


Ingredients

  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/2 red onion, thinly sliced
  • 1 cup Kalamata olives, pitted
  • 1 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Start by preparing all the vegetables: halve the cherry tomatoes, dice the cucumber and bell pepper, and thinly slice the red onion.
  2. In a large bowl, combine the cherry tomatoes, cucumber, bell pepper, red onion, Kalamata olives, and feta cheese.
  3. In a separate small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper.
  4. Pour the dressing over the salad mixture and toss gently to combine.
  5. Layer the salad in mason jars, starting with the dressing at the bottom, followed by the heavier ingredients, and finishing with the lighter ingredients on top.
  6. Seal the jars and refrigerate until ready to serve.
