Description

A comforting and hearty tomato soup made with canned tomatoes, perfect for warming up during the cold winter months.


Ingredients

Scale
  • 2 cans (14.5 oz each) diced tomatoes
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 cups vegetable broth
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1/2 cup heavy cream (optional)

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add chopped onion and garlic, sauté until softened.
  3. Stir in the canned tomatoes, vegetable broth, basil, oregano, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer for 20 minutes.
  5. If desired, stir in heavy cream and heat through.
  6. Blend the soup until smooth using an immersion blender or regular blender.
  7. Serve hot, garnished with fresh basil if desired.

Notes

  • For a vegan version, omit the heavy cream or substitute with coconut cream.
  • This soup can be stored in the refrigerator for up to 5 days.
