- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
- 1 cup whipped topping
- 1 cup graham cracker crumbs
- 1/4 cup unsalted butter, melted
- Fresh fruit or chocolate for topping (optional)
Instructions
- In a mixing bowl, beat the softened cream cheese until smooth.
- Add the powdered sugar and vanilla extract, and mix until well combined.
- Fold in the whipped topping gently until fully incorporated.
- In another bowl, combine graham cracker crumbs and melted butter, mixing until crumbly.
- Press the graham cracker mixture into the bottom of mini cupcake liners to form a crust.
- Fill each crust with the cheesecake mixture, smoothing the top with a spatula.
- Chill in the refrigerator for at least 2 hours before serving.
- Top with fresh fruit or chocolate if desired before serving.
Notes
- Make sure the cream cheese is at room temperature for easier mixing.
- These cheesecake bites can be made a day in advance.
