Ingredients

- 2 ripe bananas
- 1 cup coconut milk
- 1 teaspoon peppermint extract
- 1/2 cup dark chocolate chips
- 1/4 cup fresh mint leaves
Instructions
- Peel and slice the bananas, then freeze them for at least 2 hours.
- In a blender, combine the frozen bananas, coconut milk, and peppermint extract.
- Blend until smooth and creamy.
- Add the chocolate chips and mint leaves, and pulse a few times to mix.
- Transfer the mixture to a container and freeze for another 1-2 hours before serving.
Notes
- For a sweeter nice cream, add a tablespoon of maple syrup.
- Make sure to use dairy-free chocolate chips for a fully vegan dessert.
- Store leftovers in an airtight container in the freezer.
