Description

A refreshing and vibrant vegan soup made with fresh peas and mint, perfect for spring.


Ingredients

  • 2 cups fresh or frozen peas
  • 1 cup vegetable broth
  • 1/2 cup fresh mint leaves
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. In a pot, heat olive oil over medium heat and sauté the chopped onion until translucent.
  2. Add minced garlic and cook for another minute.
  3. Add the peas and vegetable broth, bringing the mixture to a boil.
  4. Reduce heat and simmer for about 5-7 minutes until peas are tender.
  5. Remove from heat and stir in the fresh mint leaves.
  6. Blend the soup until smooth using an immersion blender or a regular blender.
  7. Season with salt and pepper to taste before serving.
