- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 tablespoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1 cup buttermilk
- 2 cups peeled and diced apples
- 1/2 cup brown sugar
- 1/4 cup all-purpose flour (for crumb topping)
- 1/2 teaspoon ground cinnamon (for crumb topping)
- 1/4 cup unsalted butter (for crumb topping)
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together flour, sugar, baking powder, baking soda, cinnamon, and salt.
- In another bowl, mix melted butter, eggs, and buttermilk until well combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the diced apples.
- In a separate bowl, prepare the crumb topping by mixing brown sugar, flour, cinnamon, and melted butter until crumbly.
- Fill each muffin cup with batter and sprinkle the crumb topping generously over each muffin.
- Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
- Allow to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
Notes
- For extra flavor, add chopped nuts or raisins to the batter.
- Store muffins in an airtight container for up to 3 days.
- These muffins can be frozen for up to 3 months.
