Description

A deliciously moist pumpkin bread topped with a crunchy streusel and a sweet maple glaze, perfect for fall.


Ingredients

  • 1 ½ cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • 1 cup canned pumpkin puree
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup chopped nuts (optional)
  • ½ cup rolled oats (for streusel)
  • ¼ cup brown sugar (for streusel)
  • ¼ cup all-purpose flour (for streusel)
  • ¼ cup butter, melted (for streusel)
  • ½ cup powdered sugar (for glaze)
  • 2 tbsp maple syrup (for glaze)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, mix together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  3. In another bowl, whisk together the granulated sugar, brown sugar, pumpkin puree, vegetable oil, eggs, and vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  5. If using, fold in the chopped nuts.
  6. Pour the batter into the prepared loaf pan.
  7. In a separate bowl, combine the rolled oats, brown sugar, flour, and melted butter to make the streusel topping. Sprinkle it over the batter.
  8. Bake for 60-70 minutes or until a toothpick inserted in the center comes out clean.
  9. While the bread is baking, prepare the maple glaze by mixing powdered sugar and maple syrup until smooth.
  10. Once the bread is done, let it cool for 10 minutes before transferring it to a wire rack. Drizzle the maple glaze over the top before serving.

  • Store leftovers in an airtight container at room temperature for up to 3 days.
  • This bread can be frozen for up to 3 months; wrap it tightly in plastic wrap and foil.
