A deliciously moist pumpkin bread topped with a crunchy streusel and a sweet maple glaze, perfect for fall.

- 1 ½ cups all-purpose flour
- 1 tsp baking soda
- ½ tsp baking powder
- ½ tsp salt
- 1 tsp ground cinnamon
- ½ tsp ground nutmeg
- ½ cup granulated sugar
- ½ cup brown sugar
- 1 cup canned pumpkin puree
- ½ cup vegetable oil
- 2 large eggs
- 1 tsp vanilla extract
- ½ cup chopped nuts (optional)
- ½ cup rolled oats (for streusel)
- ¼ cup brown sugar (for streusel)
- ¼ cup all-purpose flour (for streusel)
- ¼ cup butter, melted (for streusel)
- ½ cup powdered sugar (for glaze)
- 2 tbsp maple syrup (for glaze)
Instructions
- Preheat the oven to 350°F (175°C) and grease a loaf pan.
- In a bowl, mix together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
- In another bowl, whisk together the granulated sugar, brown sugar, pumpkin puree, vegetable oil, eggs, and vanilla extract.
- Gradually add the dry ingredients to the wet ingredients and mix until just combined.
- If using, fold in the chopped nuts.
- Pour the batter into the prepared loaf pan.
- In a separate bowl, combine the rolled oats, brown sugar, flour, and melted butter to make the streusel topping. Sprinkle it over the batter.
- Bake for 60-70 minutes or until a toothpick inserted in the center comes out clean.
- While the bread is baking, prepare the maple glaze by mixing powdered sugar and maple syrup until smooth.
- Once the bread is done, let it cool for 10 minutes before transferring it to a wire rack. Drizzle the maple glaze over the top before serving.
Notes
- Store leftovers in an airtight container at room temperature for up to 3 days.
- This bread can be frozen for up to 3 months; wrap it tightly in plastic wrap and foil.
- For a richer flavor, add chocolate chips or dried cranberries to the batter.
