Ingredients

- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsweetened cocoa powder
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 4 large eggs
- 1 teaspoon vanilla extract
- 3 cups Neapolitan ice cream (strawberry, vanilla, chocolate)
- Whipped cream for topping
- Chocolate shavings for garnish
Instructions
- Preheat the oven to 350°F (175°C) and grease a jelly roll pan.
- In a bowl, mix flour, cocoa powder, baking powder, and salt.
- In another bowl, beat eggs and sugar until light and fluffy.
- Gradually add the dry ingredients to the egg mixture and mix well.
- Spread the batter evenly in the prepared pan and bake for 12-15 minutes.
- Once baked, remove from the oven and let it cool slightly.
- Place a clean kitchen towel on a flat surface and dust it with powdered sugar.
- Invert the cake onto the towel and carefully peel off the parchment paper.
- Roll the cake with the towel and let it cool completely.
- Once cooled, unroll the cake and spread the Neapolitan ice cream evenly over it.
- Roll the cake back up without the towel and wrap it in plastic wrap.
- Freeze for at least 4 hours or until firm.
- Before serving, slice and top with whipped cream and chocolate shavings.
Notes
- Make sure the ice cream is slightly softened for easy spreading.
- Feel free to customize the flavors of ice cream to your liking.
- Store leftovers in the freezer for up to a week.
