A delicious and elegant no-bake chocolate raspberry tart that is perfect for Mother’s Day or any special occasion.

- 1 1/2 cups chocolate cookie crumbs
- 1/2 cup unsalted butter, melted
- 1 cup heavy cream
- 8 oz dark chocolate, chopped
- 1/4 cup powdered sugar
- 1 tsp vanilla extract
- 2 cups fresh raspberries
- Mint leaves for garnish (optional)
Instructions
- In a bowl, combine chocolate cookie crumbs and melted butter until well mixed.
- Press the mixture into the bottom and up the sides of a tart pan to form the crust.
- In a saucepan, heat the heavy cream over medium heat until it begins to simmer.
- Remove from heat and add the chopped dark chocolate, stirring until smooth.
- Stir in powdered sugar and vanilla extract until fully combined.
- Pour the chocolate mixture into the prepared crust and smooth the top.
- Refrigerate for at least 4 hours or until set.
- Before serving, top with fresh raspberries and garnish with mint leaves if desired.
Notes
- Make sure to use high-quality dark chocolate for the best flavor.
- This tart can be made a day in advance and stored in the refrigerator.
- Feel free to substitute other berries if raspberries are not available.
