- 1/2 cup powdered sugar
- 1/2 cup sour cream
- 1/4 cup fresh lemon juice
- 1 tsp lemon zest
- 1 cup whipped cream
- 1 cup graham cracker crumbs
- 2 tbsp melted butter
- Fresh lemon slices for garnish
Instructions
- In a mixing bowl, beat the softened cream cheese until smooth.
- Add the powdered sugar, sour cream, lemon juice, and lemon zest, and mix until well combined.
- Gently fold in the whipped cream until the mixture is light and fluffy.
- In another bowl, combine the graham cracker crumbs and melted butter, mixing until the crumbs are evenly coated.
- In serving cups, layer the graham cracker mixture at the bottom, followed by the lemon cheesecake filling.
- Repeat the layers until the cups are filled, finishing with the cheesecake layer on top.
- Chill in the refrigerator for at least 2 hours before serving.
- Garnish with fresh lemon slices before serving.
Notes
- For a stronger lemon flavor, add more lemon zest.
- These cups can be made a day in advance for convenience.
