- 2 cups fresh peaches, diced
- 1 cup heavy whipping cream
- 1 tablespoon lemon juice
Instructions
- In a bowl, combine graham cracker crumbs and melted butter, then press into the bottom of a baking dish to form the crust.
- In a separate bowl, beat the cream cheese until smooth, then add powdered sugar and vanilla extract, mixing until well combined.
- Fold in the diced peaches and lemon juice into the cream cheese mixture.
- In another bowl, whip the heavy cream until stiff peaks form, then gently fold it into the peach mixture.
- Spread the peach cheesecake filling over the graham cracker crust evenly.
- Refrigerate for at least 4 hours or until set.
- Cut into bars and serve chilled.
