- 1 can (14.5 oz) diced tomatoes
- 2 cups chicken broth
- 1 cup heavy cream
- 1 tsp Cajun seasoning
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large skillet, cook the sliced Cajun sausage over medium heat until browned.
- Add the diced onion, garlic, and bell pepper, and sauté until softened.
- Stir in the diced tomatoes, chicken broth, and Cajun seasoning.
- Add the penne pasta and bring to a boil. Reduce heat and simmer until pasta is cooked.
- Stir in the heavy cream and cook until heated through.
- Season with salt and pepper to taste.
