- 4 chicken thighs
- 2 cups cherry tomatoes
- 1 cup Kalamata olives
- 1 lemon, juiced and zested
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a large oven-safe skillet, heat olive oil over medium heat.
- Season the chicken thighs with salt, pepper, and oregano, then add them to the skillet, skin-side down.
- Cook for about 5-7 minutes until the skin is golden brown.
- Flip the chicken and add the garlic, tomatoes, olives, lemon juice, and zest to the skillet.
- Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through.
- Remove from the oven and let it rest for a few minutes before serving.
Notes
- For extra flavor, marinate the chicken in lemon juice and herbs for a few hours before cooking.
