Description

A delicious and easy one-pan meal featuring tender chicken, vibrant tomatoes, and briny olives, all infused with zesty lemon flavor.


Ingredients

  • 4 chicken thighs
  • 2 cups cherry tomatoes
  • 1 cup Kalamata olives
  • 1 lemon, juiced and zested
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large oven-safe skillet, heat olive oil over medium heat.
  3. Season the chicken thighs with salt, pepper, and oregano, then add them to the skillet, skin-side down.
  4. Cook for about 5-7 minutes until the skin is golden brown.
  5. Flip the chicken and add the garlic, tomatoes, olives, lemon juice, and zest to the skillet.
  6. Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through.
  7. Remove from the oven and let it rest for a few minutes before serving.
