Description

A delicious and easy one-pan recipe for grilled lemon-herb chicken and veggies, perfect for a Memorial Day dinner.


Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 lemons (juiced and zested)
  • 2 teaspoons dried oregano
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 2 cups mixed vegetables (bell peppers, zucchini, and red onion)

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a bowl, mix olive oil, lemon juice, lemon zest, oregano, garlic powder, salt, and pepper.
  3. Marinate the chicken breasts in the mixture for at least 30 minutes.
  4. Place the marinated chicken on the grill and cook for 6-7 minutes on each side.
  5. In the last 5 minutes of cooking, add the mixed vegetables to the grill.
  6. Once the chicken is cooked through and the veggies are tender, remove from the grill.
  7. Let the chicken rest for a few minutes before slicing and serving with the grilled veggies.
