- 4 boneless, skinless chicken breasts
- 1 bunch of asparagus, trimmed
- 4 cloves of garlic, minced
- 2 lemons, juiced and zested
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine olive oil, lemon juice, lemon zest, minced garlic, salt, and pepper.
- Add the chicken breasts to the bowl and coat them well with the marinade.
- Place the marinated chicken on a baking sheet.
- Arrange the asparagus around the chicken on the baking sheet.
- Drizzle any remaining marinade over the asparagus.
- Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the asparagus is tender.
- Garnish with fresh parsley before serving.

- For extra flavor, marinate the chicken for a few hours or overnight.
- Feel free to add other vegetables like cherry tomatoes or bell peppers.
