- 1 lb chicken thighs, boneless and skinless
- 1 cup long-grain rice
- 2 cups chicken broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup frozen peas and carrots
- 1 tsp paprika
- 1 tsp dried thyme
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onion and garlic, sauté until translucent.
- Season chicken thighs with salt, pepper, and paprika, then add to the pot.
- Brown the chicken on both sides, about 5 minutes each side.
- Add rice, chicken broth, peas, carrots, and thyme to the pot.
- Bring to a boil, then reduce heat to low and cover.
- Cook for 20-25 minutes, or until rice is tender and chicken is cooked through.
- Fluff the rice with a fork and serve hot.
Notes
- For extra flavor, marinate the chicken in spices for a few hours before cooking.
- You can substitute brown rice, but adjust the cooking time accordingly.
- Feel free to add other vegetables like bell peppers or corn.
