Description

One Pot Chicken and Rice is a delicious and easy-to-make meal that combines tender chicken with flavorful rice, all cooked in one pot for minimal cleanup.


Ingredients

  • 1 lb chicken thighs, boneless and skinless
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup frozen peas and carrots
  • 1 tsp paprika
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and garlic, sauté until translucent.
  3. Season chicken thighs with salt, pepper, and paprika, then add to the pot.
  4. Brown the chicken on both sides, about 5 minutes each side.
  5. Add rice, chicken broth, peas, carrots, and thyme to the pot.
  6. Bring to a boil, then reduce heat to low and cover.
  7. Cook for 20-25 minutes, or until rice is tender and chicken is cooked through.
  8. Fluff the rice with a fork and serve hot.

Notes

  • For extra flavor, marinate the chicken in spices for a few hours before cooking.
  • You can substitute brown rice, but adjust the cooking time accordingly.
