Ingredients

- 8 oz pasta
- 1 lb shrimp, peeled and deveined
- 2 cups spring vegetables (asparagus, peas, and bell peppers)
- 4 cloves garlic, minced
- 2 tbsp olive oil
- 1 cup vegetable broth
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, heat olive oil over medium heat.
- Add minced garlic and sauté until fragrant.
- Add shrimp and cook until pink, about 2-3 minutes.
- Stir in spring vegetables and cook for another 2 minutes.
- Add pasta and vegetable broth, bringing to a boil.
- Reduce heat and simmer until pasta is cooked, about 10 minutes.
- Stir in Parmesan cheese and season with salt and pepper.
- Garnish with fresh parsley before serving.

- Feel free to substitute any seasonal vegetables you have on hand.
- For a spicier kick, add red pepper flakes.
