Ingredients

- 1 cup green or brown lentils
- 4 cups vegetable broth
- 2 cups chopped kale
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- In a large pot, heat olive oil over medium heat.
- Add diced onion, garlic, carrots, and celery; sauté until softened.
- Stir in cumin and smoked paprika, cooking for another minute.
- Add lentils and vegetable broth; bring to a boil.
- Reduce heat and simmer for 25-30 minutes, or until lentils are tender.
- Stir in chopped kale and cook for an additional 5 minutes.
- Season with salt and pepper to taste before serving.
Notes
- Feel free to add other vegetables like potatoes or bell peppers.
- This stew can be stored in the refrigerator for up to 5 days.
- For a spicier version, add red pepper flakes.
