Ingredients

Scale
  • 1 cup green or brown lentils
  • 4 cups vegetable broth
  • 2 cups chopped kale
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add diced onion, garlic, carrots, and celery; sauté until softened.
  3. Stir in cumin and smoked paprika, cooking for another minute.
  4. Add lentils and vegetable broth; bring to a boil.
  5. Reduce heat and simmer for 25-30 minutes, or until lentils are tender.
  6. Stir in chopped kale and cook for an additional 5 minutes.
  7. Season with salt and pepper to taste before serving.
