Description

Ingredients

  • 1 cup rice
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 4 cups vegetable broth
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Rinse and soak the red beans overnight.
  2. In a large pot, heat olive oil over medium heat.
  3. Add chopped onion, garlic, and bell pepper; sauté until softened.
  4. Add soaked red beans, rice, vegetable broth, cumin, paprika, salt, and pepper.
