- 1 cup rice

- 1 bell pepper, chopped
- 4 cups vegetable broth

- 2 tablespoons olive oil
Instructions
- Rinse and soak the red beans overnight.
- In a large pot, heat olive oil over medium heat.
- Add chopped onion, garlic, and bell pepper; sauté until softened.
- Add soaked red beans, rice, vegetable broth, cumin, paprika, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 30-40 minutes until beans and rice are tender.
- Stir occasionally and add more broth if necessary.
