- 1 lb ground beef or turkey
- 1 can fire-roasted corn (15 oz)
- 1 packet taco seasoning
- 2 cups beef broth
- 1 cup shredded cheddar cheese
- 1 can diced tomatoes (14.5 oz)
- 1/2 cup chopped onion
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onion and cook until translucent.
- Add ground beef or turkey and cook until browned.
- Stir in taco seasoning, fire-roasted corn, diced tomatoes, and beef broth.
- Bring to a boil, then add pasta.
- Reduce heat and simmer until pasta is cooked, about 10-12 minutes.
- Stir in shredded cheddar cheese until melted.
- Season with salt and pepper to taste.

- For a vegetarian option, substitute ground meat with black beans or lentils.
- Feel free to add your favorite toppings like avocado or sour cream.
