- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) diced tomatoes
- 1 cup corn, frozen or canned
- 1 packet taco seasoning
- 2 cups beef broth
- 1 cup shredded cheese
- Chopped cilantro for garnish
Instructions
- In a large skillet, brown the ground beef over medium heat until fully cooked.
- Add the rice, black beans, diced tomatoes, corn, taco seasoning, and beef broth to the skillet.
- Stir well to combine all ingredients.
- Bring the mixture to a boil, then reduce heat to low and cover.
- Simmer for about 20 minutes, or until the rice is tender and the liquid is absorbed.
- Stir in the shredded cheese until melted.
- Garnish with chopped cilantro before serving.
