Ingredients

  • 1 cup long-grain rice
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes
  • 1 cup corn, frozen or canned
  • 1 packet taco seasoning
  • 2 cups beef broth
  • 1 cup shredded cheese
  • Chopped cilantro for garnish

Instructions

  1. In a large skillet, brown the ground beef over medium heat until fully cooked.
  2. Add the rice, black beans, diced tomatoes, corn, taco seasoning, and beef broth to the skillet.
  3. Stir well to combine all ingredients.
  4. Bring the mixture to a boil, then reduce heat to low and cover.

  6. Stir in the shredded cheese until melted.
