- 1 lb ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (10 oz) diced tomatoes with green chilies
- 2 cups salsa
- 8 corn tortillas, cut into strips
- 2 cups shredded cheese (cheddar or Mexican blend)
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
Instructions
- In a large skillet, brown the ground beef over medium heat. Drain excess fat.
- Add chopped onion and minced garlic to the skillet, cooking until softened.
- Stir in black beans, corn, diced tomatoes, salsa, cumin, chili powder, salt, and pepper.
- Layer half of the tortilla strips over the meat mixture.
- Sprinkle half of the cheese over the tortillas.
- Repeat the layers with the remaining tortillas and cheese.
- Cover the skillet and cook on low heat for about 15-20 minutes, until the cheese is melted and bubbly.
- Serve hot, garnished with fresh cilantro if desired.
Notes
- Feel free to add more vegetables like bell peppers or zucchini for extra nutrition.
- This dish can be made ahead of time and reheated before serving.
- For a spicier version, add jalapeños or hot sauce to the meat mixture.
