Description

A delicious and easy-to-make One-Skillet Mexican Lasagna, perfect for celebrating Cinco de Mayo with family and friends.


Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 2 cups salsa
  • 8 corn tortillas, cut into strips
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste

Instructions

  1. In a large skillet, brown the ground beef over medium heat. Drain excess fat.
  2. Add chopped onion and minced garlic to the skillet, cooking until softened.
  3. Stir in black beans, corn, diced tomatoes, salsa, cumin, chili powder, salt, and pepper.
  4. Layer half of the tortilla strips over the meat mixture.
  5. Sprinkle half of the cheese over the tortillas.
  6. Repeat the layers with the remaining tortillas and cheese.
  7. Cover the skillet and cook on low heat for about 15-20 minutes, until the cheese is melted and bubbly.
  8. Serve hot, garnished with fresh cilantro if desired.

  • Feel free to add more vegetables like bell peppers or zucchini for extra nutrition.
  • This dish can be made ahead of time and reheated before serving.
