- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
- 1 cup whipped topping
- 1 cup graham cracker crumbs
- 1/4 cup unsalted butter, melted
- Red and blue food coloring
- Fresh strawberries and blueberries for topping
Instructions
- In a mixing bowl, beat the cream cheese until smooth.
- Add powdered sugar and vanilla extract, mixing until well combined.
- Fold in the whipped topping gently.
- In another bowl, combine graham cracker crumbs and melted butter, mixing until crumbly.
- Press the crumb mixture into the bottom of mini cupcake liners.
- Divide the cheesecake mixture into two bowls; tint one with red food coloring and the other with blue.
- Layer the red and blue cheesecake mixtures in the cupcake liners.
- Chill in the refrigerator for at least 2 hours.
- Top with fresh strawberries and blueberries before serving.
Notes
- Make sure the cream cheese is at room temperature for easy mixing.
- Use a piping bag for a cleaner layer of colored cheesecake.
