Ingredients

  • 1/2 cup peach puree

  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup peach slices for topping
  • 1 cup whipped cream for frosting

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the peach puree, sparkling wine, and vanilla extract.
  5. In another bowl, whisk together the flour, baking powder, baking soda, and salt.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  7. Fill the cupcake liners about 2/3 full with the batter.
  8. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
  9. Allow the cupcakes to cool completely before frosting with whipped cream.
  10. Top with fresh peach slices and serve.
