Description

Peach Blueberry Crumb Pie Bars are a delicious and refreshing summer dessert that combines the sweetness of peaches and blueberries with a crumbly topping. They are perfect for enjoying on a warm day and can be made ahead of time and frozen for later.


Ingredients

  • 2 cups fresh peaches, diced
  • 1 cup fresh blueberries
  • 1 cup all-purpose flour
  • 1 cup rolled oats
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 tablespoon lemon juice

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a baking dish.
  2. In a bowl, combine the diced peaches, blueberries, lemon juice, and half of the granulated sugar. Set aside.
  3. In another bowl, mix the flour, oats, brown sugar, cinnamon, and salt. Stir in the melted butter until crumbly.
  4. Press half of the crumb mixture into the bottom of the prepared baking dish.
  5. Spread the peach and blueberry mixture over the crust.
  6. Sprinkle the remaining crumb mixture on top of the fruit.
  7. Bake for 30-35 minutes or until the top is golden brown.
  8. Allow to cool before cutting into bars.

Notes

  • These bars can be stored in the freezer for up to 3 months.
  • Feel free to substitute other fruits based on your preference.
  • Serve with a scoop of vanilla ice cream for an extra treat.
