- 1 lb pork tenderloin
- 1 cup peach preserves
- 2 tablespoons soy sauce
- 1 tablespoon Dijon mustard
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1 tablespoon olive oil
- Fresh peaches, sliced (for garnish)
Instructions
- Preheat the oven to 400°F (200°C).
- In a small bowl, mix together peach preserves, soy sauce, Dijon mustard, garlic powder, salt, and pepper.
- Heat olive oil in a large oven-safe skillet over medium-high heat.
- Season the pork tenderloin with salt and pepper, then sear it in the skillet for 2-3 minutes on each side until browned.
- Brush the peach glaze over the pork tenderloin.
- Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the internal temperature reaches 145°F (63°C).
- Remove from the oven and let it rest for 5 minutes before slicing.
- Garnish with fresh peach slices and serve.
Notes
- For a spicier glaze, add a pinch of red pepper flakes.
- Serve with a side of roasted vegetables or rice for a complete meal.
- Leftovers can be stored in the refrigerator for up to 3 days.
