Ingredients

  • 1 lb pork tenderloin
  • 1 cup peach preserves
  • 2 tablespoons soy sauce
  • 1 tablespoon Dijon mustard
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Fresh peaches, sliced (for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a small bowl, mix together peach preserves, soy sauce, Dijon mustard, garlic powder, salt, and pepper.
  3. Heat olive oil in a large oven-safe skillet over medium-high heat.
  4. Season the pork tenderloin with salt and pepper, then sear it in the skillet for 2-3 minutes on each side until browned.
  5. Brush the peach glaze over the pork tenderloin.
  6. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the internal temperature reaches 145°F (63°C).
  7. Remove from the oven and let it rest for 5 minutes before slicing.
  8. Garnish with fresh peach slices and serve.
